Sweet Potato Chili |

Ingredients
1 can (14 1/2 ounce) black beans, drained and liquid reserved
1 can (14 1/2 ounce) diced tomatoes
4 Tbsp. olive oil
8 ounces small mushrooms, halved
1 small onion, chopped
1 sweet potato, peeled and chopped finely
1 green pepper, deseeded and diced
2 tsp. ground coriander
1 tsp. ground cumin
2 tsp. chili powder
1/2 tsp. minced garlic
Directions
1 - Heat half the oil in a pan and stir fry mushrooms for 5 minutes
before setting them aside.
2 - Add rest of oil to pan and fry onion, sweet potato, pepper, garlic,
and spices for 5 minutes.
3 - Add liquid from the can of black beans and continue to saute vegetables
for about 10 minutes or until sweet potatoes are tender.
4 - Add mushrooms, tomatoes, and beans.
5 - Bring chili to a boil and then simmer another 10 minutes.
Serve garnished with sour cream or cheese and with tortilla chips.
