Sweet Potato Chili

Ingredients
- 1 can (14 1/2 ounce) black beans, drained and liquid reserved
- 1 can (14 1/2 ounce) diced tomatoes
- 4 Tbsp. olive oil
- 8 ounces small mushrooms, halved
- 1 small onion, chopped
- 1 sweet potato, peeled and chopped finely
- 1 green pepper, deseeded and diced
- 2 tsp. ground coriander
- 1 tsp. ground cumin
- 2 tsp. chili powder
- 1/2 tsp. minced garlic
Directions
- Heat half the oil in a pan and stir fry mushrooms for 5 minutes before setting them aside.
- Add rest of oil to pan and fry onion, sweet potato, pepper, garlic, and spices for 5 minutes.
- Add liquid from the can of black beans and continue to saute vegetables for about 10 minutes or until sweet potatoes are tender.
- Add mushrooms, tomatoes, and beans.
- Bring chili to a boil and then simmer another 10 minutes.
Note: Serve garnished with sour cream or cheese and with tortilla chips.
